Famously known as Hariyali (green) Tikka, this refreshing marinade, which originated in Northern India, is made with coriander, mint and lemon, and is perfect for a summer barbecue. It’s extremely versatile, working wonders with any white meats, and can be used as a marinade, spread, dip or chutney.
