Chorizo Sausage Vindaloo
Vindaloo is a staple Goan dish. Gymkhana's version is made with pork cheeks, braised slowly. For this occasion, spiced pork sausages work just as well. Cooking Chorizo on the BBQ, then lathering our carefully prepared, pre-made sauce over the top, adding a splash of water, and roasting it all in the oven is a much quicker way to achieve the comforting unctuousness for which our rendition is famous. Our Chefs recommend serving it with a side of Basmati rice.
